71st Republic Day of India

I had a chance to attend the 71st Republic Day of India at the Makati Shangri-La hotel in Rizal Ballroom. The event was very well attended. I really likes how the Indian Ambassador himself welcomed everyone who stepped inside the venue. Apart from the cultural dances, artworks on display, there was also an Indian feast.

Quarantine Cooking: Cheeseburger Pizza

I normally don't crave for pizza but  the possibilities of dough unlocked this for me. The result is cheeseburger on one side and Chicken cheese on the other. DOUGH: Mix accordingly 1 1/4 cup flour, 1 tsp baking powder, 1/4 tsp iodized salt, 1/4 cup water (slowly add), 1 tbsp warm water and 1 tbsp cooking oil (once the water and flour is thoroughly mixed) Knead for 15 mins then shape into a ball, smear with oil, cover with cling wrap and let the dough rest for 30 mins. After resting, sprinkle some flour on tbe board and lay the dough on top. Spread some flour on the chopping board and roll the dough into an oblong shape Put some flour on your knife and cut the dough into smaller pieces and form them into  balls. I have never in my 36 years of existence, have had the slightest interest in cooking and baking until the pandemic happened and we had to stay home for over two months with very minimal trips outside and only for essentials like groceries.  After a couple of weeks, I started craving for food that I can easily buy outside but now am unable to do so since the bakeshops and estaurants were closed anyway. These food craving led me to my discovery of flour and specifically making dough. However, the lack of a proper oven can hamper one's spirit not to mention output. Working with what I have, I first started reasearching about what I could do with dough with either a toaster oven or frying pan to cook it, then for each item I make, I read about 5-10 articles about it and watch at least 5 youtube videos on how to make it. Change Is Good

It's a friday night, the air cool, we have the window open and I can hear people laughing in the watering hole below the condo. I contemplate on what to do to fill my spare time with 3 hours to spare before nap time. Days like these are quite rare. More often than not, my spare time is used to hang out with officemates after work. But how will we ever expand our social circle if we don't go beyond our comfort zone? So I declare a few challenges to me: Before I was so keen on pusuing going to SOFA and at the last minute did not enroll because of the money I will spend. Ironic, right? 1. Get fit - Diet Diva will serve my meals 2. Go boxing - Empire Boxing is just across the condo I really should do it 3. A cultural weekend part 1: I Love Kusama

I had a full weekend scheduled and it just so happened that this weekend was all about culture. On Saturday, I went to see the Kusama Art Exhibit (Form the private collection of Lito and Kim Camacho). I was so excited when I passed by Ayala Museum before it officially opened in July but haven't had the time to visit it until the second to the last day of the exhibit. A brief background: Yayoi Kusama was born in Japan, 1929, is one of the leading and most influential figures of the avant-garde scene and is credited to be an important precursor of various art movements which took shape between the 1950s and 60s, namely Minimalism, Feminism and Pop Art.
